RECIPE :: This ain’t your momma’s Chicken Pot Pie, or is it?

My Mom makes the BEST chicken pot pies.  I have always wanted to make it, just been intimidated.  I know, ridiculous.  So simple you much be thinking.  I’m not one who does a lot of cooking.  I love to do it, it just isn’t very easy because we don’t have a whole lot of space in our kitchen.

Anyways, the list of food items that Mike will eat is very short.  He too loves my Mom’s pot pie, so I decided to try it.  I figure, why not…we have been married for 9 years, why wait any longer LOL!

Here is the recipe for those who have been asking:

Ingredients
(We LOVE a pot pie that is full of insides – so double the recipe when making your own)
2 tbs. butter
2 tbs. flour
1/4 tsp salt
1/8 tsp. pepper
1/8 tsp. thyme
1/2 c. chicken broth
1/2 c. light cream or whole milk (I used almond milk and it still worked)
2 c. cooked chicken or turkey if you want a turkey pot pie**
1 can of corn
1 can of carrots (I chopped these up smaller)
Any other vegetables you want 🙂

Sauce
Melt the butter.
Blend in the flour, salt, pepper and thyme.  Blend until it’s thick.
Add cream and chicken broth and stir until creamy.
Boil and stir for 1 minute.
Once it is thick, put in the chicken and veggies.
Dump in pie crust and put crust over top as well (you can make your own crust or buy pre-made ones from the store.)
Bake at 425 degrees for 35-40 minutes!
